I have a thing for cheesecake. I know that won’t come as a surprise to a lot of you who have been with me for a while. I’ve also developed a horrible cookie habit that I blame on Pinterest. The combination of the two when I saw these Double Chocolate Cheesecake Cookies was something I knew I had to try. I think this was a horrible discovery from the standpoint of my already snug yoga pants but I just can’t seem to be unhappy about it.

The ingredients for these cookies aren’t anything out of the ordinary, which is a little unfortunate because I have everything in the house all the time.

I let the butter sit and soften for a little while but you know better than to think that it was longer than 10 minutes before I got bored. So I threw it and the sugars in the kitchen aid, turned it on and wandered away while it softened. Can I just say that it made me happy that I wasn’t supposed to let the cream cheese soften? I took it out of the fridge and cut it up then threw it in.

When it was combined I threw in the egg and vanilla and let them mix then threw in the dry ingredients. I ran it on low until it was mostly combined then manually finished mixing it.

The dough was thick so mixing in the chocolate chips totally counted as a workout, which is probably a good thing because burning a few extra calories before these came out of the oven can’t hurt, right?

I had no problem throwing the dough in the fridge to set, after all of that mixing by hand I was ready for a short break. By the time my arm stopped aching, I was ready to bake.

I used my big cookie scoop for these, plopped them on the tray and put them in the oven for 11 minutes. They came out perfect!

You guys, these tasted so good. They were soft and chewy and the cream cheese gave them just a hint of cheesecake goodness. I didn’t have marscapone in the house so I skipped the glaze. I’m sure it would have been amazing but they were great without it.
